Cream of Mushroom Soup
Ingredients
2 Tbsp Butter
1/2 lb Fresh Sliced Mushrooms
1/2 Yellow Onion chopped
4 Tbsp All Purpose Flour
1/2 Tsp Kosher Salt
1/8 Tsp Pepper
1 Cups Vegetable Stock
1 Cups Whole Milk
Instructions:
In a large saucepan, heat butter over medium heat; saute mushrooms and onion until tender.
Mix flour, salt, pepper and one cup of broth until smooth. Slowly add to mushroom mixture. Slowly add half milk. Add remaining broth and vegetable stock to desired thickness. Continue to stir and cook until thickened (about 2 minutes). Simmer uncovered until flavors are blended (about 15 minutes), stirring occasionally.
